The truffle market in Alba is famous because offers a unique initiative: all specimens for sale are controlled by a panel of judges specialized in the sensory analysis of the truffle and those who do not pass the selection are withdrawn from the market.

The truffle is one of the highest expressions of Italian cuisine and more. Fragrant, addictive, even for many aphrodisiac, the White Truffle of Alba gives a touch of nobility to each course giving tone even in very simple dishes (we all remember the egg on the stick, the raw meat , flan thistles, the tajarin).

Entered thanks to the cooks in the kitchen sponge grown noble Parisian, the truffle has toured the world conquering the boards that set the trends in the four corners of the planet.
